Garlic Mashed Potatoes

Garlic Mashed Potatoes are delicious enough to serve as a holiday side, but easy enough to make on any quick weeknight dinner. You will not love the carbs, but you will adore the flavor. So the next Thanksgiving when you're stuck bringing the drinks, because you family isn't quite sure if you can cook, make these potatoes and shut them up. I bet you they will ask for more.

Ingredients

Vegetarian ( Serves 6-8 people)


Produce

5 lbs of Red Potatoes

6-8 cloves of Garlic

1/8 Cup Chopped Chives (Note: You can also substitute this with Dried Parsley)


Baking & Spices

1 ½ tsp Salt (more, if desired)

1 ½ tsp Cracked Black Pepper (more, if desired)

1 tsp Garlic Powder


Liquids

Water


Dairy

¼ Cup Almond Milk (more, if you want the potatoes more loose)

¼ Cup Butter

4 oz. Cream Cheese

2.5 oz. Sour Cream

¼ Cup Shredded Parmesan Cheese


Directions

  1. Bring the water to a boil in a large pot. Add salt.

  2. While the water is boiling, wash and cut the unpeeled Red Potatoes into 1 in. chunks. Place the Red Potatoes and peeled Garlic Cloves into the boiling water and boil until the potatoes are tender, in about 15-20 minutes. The Red Potatoes are done when you can easily pierce a pairing (or butter knife, whatever floats your boat) through it.

  3. Remove the Red Potatoes and Garlic from the heat, strain them, and place them into a large mixing bowl.

  4. Add in the Butter, Cream Cheese, Sour Cream, Parmesan Cheese, Chopped Chives (however much you want for taste or to make it look pretty 😊), Cracked Black Pepper and another remaining ¾ tsp of Salt. Use a masher to mash and blend the ingredients together until everything is melted and combined. Add everything into a pretty serving dish and enjoy!
