When I first took my fiance home, we went out to eat with my family to our favorite soul food buffet. He absolutely loved the beef stew and til this day I have been trying to perfect my version of the recipe. I have incorporated by southern roots with my travels to Paris, falling in love with Boeuf Bourguignon. It is my absolutely favorite thing to eat while in Paris. I have had the classic version and the creative pasta version. I hope you enjoy my rendition of mixing the two styles: North Carolina's Soul Food meets a French Classic dish.
(Serves 6-8 people)
Meat & Protein
2 lb Stew Beef Meat
5 Strips of Bacon
1 lb of Red Potatoes
1 Cup Baby Carrots
3 Celery Stalks, Chopped
1 Yellow Onion
4-5 Baby Portobello Mushrooms
1 Cup Frozen Sweet Peas
1 tbsp. Minced Garlic
Baking & Spices
1 tsp Salt (more, if desired)
1 tsp Cracked Black Pepper (more, if desired)
1 ½ tsp Garlic Powder
1 tsp Onion Powder
¼ Dried Rosemary
1/2 Dried Thyme
¼ tsp Paprika
3 tbsp. Cornstarch (or more for desired thickness)
1 Beef Stew Seasoning Packet
24 oz. Low Sodium Beef Broth (3/4 of container)
Oils & Vinegars
2 tbsp. Vegetable Oil
Worcestershire Sauce of A1 Steak Sauce
¼ Cup Red Wine (ex. Cabernet, Zinfandel, or Merlot)
Wash and add Stew Beef meat to a large bowl. Add Salt, Cracked Black Pepper, Garlic Powder, Onion Powder, Paprika, Dried Thyme, Minced Garlic, and Worcestershire Sauce. Stir until the meat is fully coated with the seasonings. Set in the refrigerator to marinate.
Set your Instant Pot on Saute and add Vegetable Oil. Dice the Bacon, and add to the pot. Cook the Bacon while preparing the other ingredients.
Dice Yellow Onions, chop Celery, slice White Mushrooms, and chop Red Potatoes in 1 to 2 inch chunks. Add Yellow Onions, Celery, White Mushrooms, Red Potatoes, and Baby Carrots into the Instant Pot.
Slowly sift in the Cornstarch and Stir until mixed. Add more oil if needed. Add in the Low Sodium Beef Broth, Red Cooking Wine, and Beef Stew Seasoning Mix. (For a thicker broth or sauce, add more Cornstarch)
Add Stew Beef Meat, Dried Rosemary, and Frozen Sweet Peas to the Instant Pot.
Close the lid on the Instant Pot and follow the proper safety directions included with your pot. Set the pot on "Stew Meat" for 30-40 minutes. When finished, please remember to follow the proper safety directions included with your pot to open the lid.
Now you have something cooked from the SOUL. Serve it to the CULTURE!
