Scallops are one of my mom’s favorite types of seafood. I made this dish to try to perfect them for her. Searing a scallop is a very simple technique but also very easy to mess up. Try out this quick recipe for a perfectly seared scallop over a Sweet Basil Sauce. You will be eating in no time!
Appetizer (Serves 2 people)
4 Fresh Scallops
½ bunch Sweet Basil, fresh
½ Lemon, squeezed
Baking & Spices
Cracked Black Pepper
1 tsp Garlic Powder
Oils & Vinegars
5 tbsp Extra Virgin Olive Oil, more of needed
1 tbsp Butter, unsalted
Sweet Basil Sauce Directions
Add ½ bunch of Fresh Sweet Basil, juice from a ½ Lemon, 1 tsp of Garlic Powder, and 3 tbsp of Extra Virgin Olive Oil to a food processor or blender.
Emulsify the mixture until the Basil is mixed. Don’t over mix the sauce. You want to have small pieces of Basil and not a smooth green mixture.
Seared Scallop Directions
Rinse off scallops and dry them off with a paper towel
Season scallops with Salt and Cracked Black Pepper on both sides.
Heat up small cast iron skillet on Medium/ High Heat. When the skillet is hot add 2 tbsp of Olive Oil then add the scallops. Tip: Make sure to give them room and don’t move them once you’ve added them to the skillet.
Cook the scallops 2 minutes on each side.
Remove the scallops from the skillet and serve them on top of the Sweet Basil sauce and place the scallops on top. Serve immediately.
Now you have something cooked from the SOUL. Serve it to the CULTURE!
