Sweet Basil Scallops

Scallops are one of my mom’s favorite types of seafood. I made this dish to try to perfect them for her. Searing a scallop is a very simple technique but also very easy to mess up. Try out this quick recipe for a perfectly seared scallop over a Sweet Basil Sauce. You will be eating in no time!

Ingredients

Appetizer (Serves 2 people)

Protein

4 Fresh Scallops

Produce

½ bunch Sweet Basil, fresh

½ Lemon, squeezed

Baking & Spices

Salt

Cracked Black Pepper

1 tsp Garlic Powder

Oils & Vinegars

5 tbsp Extra Virgin Olive Oil, more of needed

Dairy

1 tbsp Butter, unsalted

Sweet Basil Sauce Directions

  1. Add ½ bunch of Fresh Sweet Basil, juice from a ½ Lemon, 1 tsp of Garlic Powder, and 3 tbsp of Extra Virgin Olive Oil to a food processor or blender.

  2. Emulsify the mixture until the Basil is mixed. Don’t over mix the sauce. You want to have small pieces of Basil and not a smooth green mixture.

Seared Scallop Directions

  1. Rinse off scallops and dry them off with a paper towel

  2. Season scallops with Salt and Cracked Black Pepper on both sides.

  3. Heat up small cast iron skillet on Medium/ High Heat. When the skillet is hot add 2 tbsp of Olive Oil then add the scallops. Tip: Make sure to give them room and don’t move them once you’ve added them to the skillet.

  4. Cook the scallops 2 minutes on each side.

  5. Remove the scallops from the skillet and serve them on top of the Sweet Basil sauce and place the scallops on top. Serve immediately.
